Blue Cheese Butter

We are huge blue cheese fans here and it proved none the less true for this Sunday Cafe. A few Sundays ago I quickly stirred some blue cheese (a little crumbly bit in the bottom of the container) into soft butter to spread on our bread. Well that did it! By request......

Blue Cheese Butter
by the seat of my pants!

1/2 c butter
 3/4 c crumbled blue cheese, divided
sprigs of your favorite herbs

Mash butter with a fork, stir in 1/2 c of the blue cheese crumbles. Mound attractively on a serving plate, sprinkle the remaining blue cheese over the top. Decorate with herb sprigs.

Serve with thick sliced french bread, heaven!

Starters included, tossed greens, with assortment of add-ons! Including roasted peppers and balsamic vinegar roasted red onion. 

Pears and Fuji Persimmon with Gorgonzola cheese

Not shown, butternut squash tossed with pesto and of course sliced french bread for that delicious Blue Cheese Butter.

Oh my! I have never heard of blue cheese butter. I love it- I never thought to do that before
