What we ARE NOT eating, Wednesday - Celery and Pecan Ring


Celery and Pecan Ring
not cooked from:  Sunset Adventures in Food, an unusual cook book with distinctive recipes from near and far.


the intro:  You can serve the ring hot, it's center filled with creamed mushroom, sweetbread, shrimp, crab or lobster or serve it cold, filled with chicken, shrimp or crab salad.

1 c fine dry bread crumbs
1 1/2 c ground celery
1 T ground parsley
1/4 c ground pecans
1/2 c ground onion
1/3 c ground green pepper (or less)
3 large eggs
3 T melted butter
1 1/2 t salt
pepper
1 1/2 c milk

Combine bread crumbs, ground celery, parsley, pecans, onion, green pepper, eggs, butter, salt, pepper and milk. Beat together thoroughly, then pour into a well buttered 81/2 inch (5 cup) ring mold. Let stand for 30 minutes. Put into a larger pan containing hot water, and bake in a moderate oven (350 degrees) for 1 hour. Let stand in hot water for 10 minutes before un-molding. Serve at once or chill.
Makes 6-8 servings.

I often wonder how they come up with these recipes... Its really a great read here everytime loving the knowledge of what is out there. I went to a book flea market and saw thousands of cookbooks the other day and though wow you would be the perfect person to bring with me... its like a critic for movies but with recipes... I just love it!

I've always wanted to make a retro ring mold recipe...but I don't have a ring and the all the ones I see at thrift stores have rust spots on them...but I don't want to make this recipe it seems too plain and a waste of pecans...thanks so much for sharing a link to my recipe.

To me, this just sounds like an old fashioned stuffing/dressing recipe put into a ring pan. I'd sub in some chicken or turkey broth for the milk, though.

As soon as I saw the title of this recipe, I started laughing, before I even visited your page. Sunset again....I bought a couple of cooking magazines last night and in one of them was an advertisement for a Sunset cookbook. I thought of you, lol! Thanks for my Wednesday laugh Melynda!

Ground celery? Huh? Do you like put it in a food processor and mush it up? And fill it with what? Sweetmeats? Come on now!!

Not too appealing but that Pork Roast was a big hit. I forgot to defrost it so I stuck it in the crockpot frozen and smeared the mixture over it. 8 hours later we had a perfect roast.
