What we ARE NOT eating, Wednesday - Tuna Cauliflower Casserole


I have a soft spot for cauliflower. I think it is over looked, at the vegetable stand and on the dinner plate. But even my affection for this delicious vegetable can not convince me to make this casserole.

Tell me, did I miss it, in the intro? Not once did I see mention of this being tasty, only convenient.


Tuna Cauliflower Casserole
not made from:  The Sunset Casserole Book
350 degree oven

the introduction:  Staples from your freezer and canned goods shelf go into this quick casserole. The baking time is just long enough to heat the cauliflower through bus short enough to keep it creamy white and crunchy.

1 can (10 1/2 oz) mushroom soup
1 can ( 6 or 7 oz) tuna, broken in small chunks
2 T chopped pimiento
1 package (10 oz) frozen cauliflower, thawed slightly, separated into pieces
1/2 c soft bread crumbs, mixed with 2 T melted butter
1 small onion, finely chopped

Spoon undiluted soup into a bowl; add tuna and pimiento mix well. Stir in uncooked cauliflower. Turn mixture into greased 1 1/2 qt casserole, sprinkle with bread crumbs if desired. Bake uncovered in a moderate (350) degree oven  for 20 minutes or just long enough to heat through and brown the crumbs. Just before serving, sprinkle with the chopped onion.

Serves 4

That sounds like tuna noodle casserole without the egg noodles. Don't think it would be quite the same with cauliflower.

At first I said "okay, that doesn't sound THAT bad" but when I read the recipe - meh. You're right, we won't be eating it. Have a great day my friend!

I would try that. Cauliflower is one of those vegetables that I'm not brave enough to cook with. It's so strong. I love it in a garden salad but it makes me burp. Lady-like huh?

I think I would need to smother this in salsa to make it palatable. Love cauliflower though!
