Italian Baked Liver with Mushroom-Olive Sauce
not cooked from: The Sunset Casserole Book
serves 6-8
the intro: This method of preparing liver is unusual in that you don't brown it; just pour the sauce over it and bake.
I used this book last week also, mmmm mmmm good!
1 medium onion, chopped
1 clove garlic, minced or mashed
1 T flour
1/2 c catsup
1 t minced parsley
1/2 c chopped celery
1/2 c chopped green pepper
1 can (4oz) mushrooms, stems and pieces
1 small can (4oz) pitted ripe olives
2 T olive oil or salad oil
1 can (8oz) tomato sauce
1 c water
1 t salt
1/2 t pepper
Place liver slices in a greased baking pan or dish (about 9X13 inch size). Combine all remaining ingredients, stir until well blended, and pour over liver. Bake uncovered in a moderate oven (350 degrees) for 30 - 40 minutes or until tender.

You're killing, you know that right? Liver and olives have to be my least favorite foods. Going to look into the yummy desserts though.
Oh my gosh, I definitely will not be eating that, either. Ick. I like liver and onions, but that method...just not appetizing to me. ha! Thanks for featuring my gnocchi, though =)
I do like liver, and I like olives, but this recipe has too many strong flavors all in one place. No surprise that I'd taste it, but I wouldn't make it.
I love olives, but there is nothing that can make me eat liver now I am a grown up :) Thank you for the great line up of featured recipes - I have come across some of them in my travels round the blogosphere, but not all - so I'm off to go visiting the ones I missed. Thank you for the tips :)
That's a pretty popular cookbook for things we DON'T want to eat, lol! Again, Joe likes liver, so.......he might actually eat it!
thanks for reminding how much I love liver and havent had it since mom passed not sure I would be eating it that style she did it fried with garlic and I love olives so who knows! I have never cooked it myself....thanks for including my zucchini squares, after making that recipe I will never make loaves again! So easy and actually moist and easier to serve~! Thanks again!
