Italian Baked Liver with Mushroom-Olive Sauce

the intro: This method of preparing liver is unusual in that you don't brown it; just pour the sauce over it and bake.
I used this book last week also, mmmm mmmm good!
2 pounds beef liver, sliced
1 medium onion, chopped
1 clove garlic, minced or mashed
1 T flour
1/2 c catsup
1 t minced parsley
1/2 c chopped celery
1/2 c chopped green pepper
1 can (4oz) mushrooms, stems and pieces
1 small can (4oz) pitted ripe olives
2 T olive oil or salad oil
1 can (8oz) tomato sauce
1 c water
1 t salt
1/2 t pepper
Place liver slices in a greased baking pan or dish (about 9X13 inch size). Combine all remaining ingredients, stir until well blended, and pour over liver. Bake uncovered in a moderate oven (350 degrees) for 30 - 40 minutes or until tender.
