What we ARE NOT eating, Wednesday, Mincemeat Salad Ring


Now I know that Mincemeat will divide even a very close and loving family. But give me a mincemeat pie any day! And I am happiest when no one else wants any and there are leftovers, especially for breakfast. However, this little jewel will not be served here.....but I do share the introduction as written.

"Unusually sweet for a gelatin salad, this mincemeat ring is very good 
with cold sliced ham or turkey." 


Mincemeat Salad Ring
not made from:
Sunset Salad Book

1 envelope (1 T) unflavored gealtin
1/4 c cold water
1 package (9oz) dry mincemeat
2 c chilled ginger ale
1/4 c lemon juice
1/3 c chopped nut meats
Sour cream or Whipped cream
grated lemon peel

Sprinkle gelatin into cold water, let stand 5 minutes. Break up mincemeat into saucepan, and add 1 cup of the ginger ale. Bring to a boil, stirring constantly; boil 1 minute. Remove from heat and stir in the gelatin mixture, lemon juice and nut meats; stir until gelatin is dissolved. Cool. Stir in remaining 1 c ginger ale. Turn into a 1 1/2 quart ring mold, chill at least 2 hours. To serve, unmold and top with sour cream or whipped cream sprinkled with a little grated lemon peel.

Serves 8

You know I always look forward to WWANE Wednesdays. Again, you do not disappoint. I have never liked any kind of jello salad or salad served in a ring shape.

Ate mincemeat pie when a was a child but not since then. Not sure if I liked it or was just told to eat it or else.

I cannot imagine eating this with cold sliced ham or turkey! Gelatin salad? Sounds weird! This is a good find, Melynda!

This is one salad I WILL NOT be eating ever.I am not a fan of mincemeat to begin with, but the rest of it all together sounds just wrong.

My mom always told me that the commercial pre-packaged mincemeat wasn't nearly as good as the "real" homemade stuff.

The thought of mincemeat doesn't bother me, but I just never developed a taste for it.

Oh I love a good mince pie too, but I think this salad ring would definitely be beyond the scope of my palate.

This strange recipe has got to be from the sixties. I had a cookbook that was from the sixties, and since then, I got rid of it because of all the strange aspic recipes...but this tops all of them. No thank you.
