What we ARE NOT eating, Wednesday, Parker House Broiled Tripe

Ladies and gentlemen it is time for another tale of what we ARE NOT eating! I must say however, those New England settlers and descendants were a strong and hearty group for having enjoyed this for dinner. I salute them, even though I did not join them for dinner.


 
Parker House Broiled Tripe
not cooked from:
The New England Cook Book

Slices of fresh (not pickled) tripe about 5 by 7 inches - allow one slice per person

1.  Sprinkle lightly with salt, pepper and flour. Dip in olive oil. then sprinkle generously with fine bread crumbs.

2.  Broil slowly 2 or 3 minutes on each side or until crumbs are brown. Charcoal fire is best.

3.  Serve with Mustard Sauce.

Now that we have finished dinner and washed the dishes (of course!) lets wander shall we?

Yeah--I wouldn't be eating that either. I remember my Ma-Maw and mom cooking/pickling tripe. They did something with vinegar where it sat on the counter all day. I'm from south Louisiana--Cajun heritage and I remember lots of things being cooked that I wouldn't eat. Have a wonderful week. Take care.

Oh my dear friend! Tripe. I'm not sure which is worse, the bologna and lemon jello or the tripe. If you say tripe over and over again it starts to sound dirty. Anyway, thanks for the link to my romanticky valentine card. Have a great day!

I have had tripe exactly once, in menudo at a Chinese Buffet (yes, Chinese...they also had a Mexican food bar). I did not like it, but not knowing for sure, I'm willing to try menudo one more time, somewhere else. But I expect that I still won't like it.

oh dear, I guess I am odd girl out here, we love tripe, mom made it into a stew, with sauce and boiled potatoes, I loved it! Sorry... on a happier note to you, thanks so much for mentioning the Amaretto cheesecakes and the fruti scones I am honored you would post both! thaks so much~

Melynda, I wasn't quite sure what tripe was so I checked it out on Wikipedia. BLECH! I see that every week in the meat department at our local grocery store but never got close enough to it to see what it actually was. Now I know. Thanks, but no thanks.... :o)

I grew up in Slovakia and I my family used to make tripe soup and and some kind of tribe goulash as well.

The soup wasn't bad.

Melynda-Just couldn't miss your Weds. post which I find so entertaining.
Re: the tripe...just the thought of looking at the tripe, and knowing that which part of the cow it's from, I would totally become a vegetarian, if I would have to eat this. It's chewy, rubbery, and awful. To some Italians it's considered a delicacy...I think not!
