Parker House Broiled Tripe

Slices of fresh (not pickled) tripe about 5 by 7 inches - allow one slice per person
1. Sprinkle lightly with salt, pepper and flour. Dip in olive oil. then sprinkle generously with fine bread crumbs.
2. Broil slowly 2 or 3 minutes on each side or until crumbs are brown. Charcoal fire is best.
3. Serve with Mustard Sauce.
