Yes it is time for another delicious jelled salad. No we won't be eating this, and honestly if the weather was warm, hot even, we would not be eating this. Bologna, lemon jello and tomato juice do not seem like a friendly trio.
Jellied Meat Ring
not cooked from:
Southern Living Inflation Fighter
Good food for hard times.
1 1/2 pounds small bologna, cut 1/8 inch thick
1 package lemon flavored gelatin
1 c hot water
1 c tomato juice
1 t salt
1/2 t sugar
1 T onion juice
1/2 c chopped cabbage
1/4 c diced celery
1/2 c chopped carrots
Mayonnaise for garnish
Cut bologna and set aside. Dissolve gelatin in water. Add tomato juice, salt, sugar and onion juice. Cover the bottow of an 8 inch ring mold with half of the gelatin mixture. Chill in the refrigerator until it becomes firm. Arrange slices of bologna on the gelatin so they overlap slightly. When remainder of the gelatin thickens, min in vegetables and pour over bologna. Chill until firm. Unmold on large chop plate. Arrange remaining bologna slices in a fan shape circle around the salad and serve with mayonnaise.
Yield 10 servings

I have to tell you, I don't think I could even taste this one. Bologna and lemon jello and tomatoe juice somehow just do not catch my pallet. An odd one for sure.

This dish is beyond wonderful! My Mom made something very much like this without adding the bologna to the salad, but next time I'm doing it your way. Try this you will not be sorry.
