Wednesday and wandering about

To be sure, you never know until you visit here where my mind will wander and what I will share in the links! As you know, I have already confessed my appreciation and strong attachment to gingerbread. Sunday, I finally made the Miss Edna Lewis  gingerbread, which I found again through google. While searching to find the one, I found many more, that I also bookmarked, because can you really have too many gingerbread recipes? See I did not think so either, and now I am glad I bookmarked them.



After baking and sharing on Sunday, I ate the piece that was on the plate in this photo. It was delicious, and I enjoyed it very much. But .............

The next piece had a much different effect on me, namely heartburn, which I rarely get. I felt I knew the offending spice, and went back to the recipe to make sure, and sure enough it was there......ground cloves.

Ground cloves have their place in cooking to be sure, but some of us don't tolerate them well. I have in the past eliminated them or cut back on it in the recipe with no significant change in the final product. But, I was very intent on making the recipe exactly as written, a goal I am trying to master! The recipe listed 1/2 t ground cloves and I obeyed, just like that. No remembering that cloves are not my friend, no cutting the amount in half, no thoughts along those lines at all. I simply obeyed, which is fairly unusual for me.

That led me to go back to all of the gingerbread recipes I had bookmarked while searching for the one. There are many, and I noticed a trend. About half of the recipes have cloves and the other half do not have cloves, simply another spice substituted. Or the recipe lists cinnamon and ginger without a third spice.  Hummmm, apparently I am not the only cloves sensitive eater out there! Whether you are a cloves sensitive eater or not, here are loads of gingerbread recipes.They are all a bit different from each other. Some make a 9X13 size cake, others are smaller. There are sauces, or cheese based garnishes, and lets not forget whipped cream.


No cloves here! We do not eat shortenings, so I would sub in butter. This one also has a nice orange sauce.

I have made this pudding cake many times, it is delicious! A small scoop of vanilla ice cream is just right on the warm cake.

I like the smaller size of this recipe, but it does list cloves. Maybe a sub with nutmeg or allspice?

I like cloves but my husband detests it. Therefore, I rarely use it, and when I do I use a fraction of what is called for in the recipe. Skipping it altogether seems to work just fine.
