And so much more

Life has a way of changing one's plans!

You don't think that will happen until you wake up on day 103 of your 53rd year and you realize it is so!

It is not that you wish things had gone differently, it is just the realization that life did in fact change your plans. But they were only plans, and apparently another truer ideal or need came about and a corner was turned, a new direction taken. That is how easily your plans are changed.

It seems like yesterday my children were born, but I am now a grandmother.

The same thing happens in the kitchen. So, be prepared............for me that means a well stocked pantry, and being able to enjoy what I have. What I want to eat is only for a meal out because you might as well know what you want, to know where to go.

At home, what is in the pantry is what will be enjoyed! The end. I do not mean to sound like a drill sergeant, but sometimes less to choose from, is the easier choice.

So serve what you have, add a bit of homemade extra and everyone will be fed and happy.

Here are a couple recipes that use the All Purpose Convenience Mix. A quick and easy way to add that homemade extra..........

Peanut Butter Cookies
375F

1/3 c sugar
1/3 c peanut butter
1 egg
1 t vanilla
1 T water
1 1/2 c All Purpose Convenience Mix

Combine sugar and peanut butter in a medium size mixing bowl, add egg vanilla and water. Beat smooth. Add mix and beat until you have a smooth dough. Make 1 inch* balls of dough, place on prepared baking sheet. Flatten with a fork dipped in sugar. Bake 8 - 10 minutes, or golden brown.

Makes about 3 dozen small cookies

*If balls are larger than 1 inch, you will need to adjust the baking time.

Potato Skillet Cakes

1 egg
1 c cold leftover mashed potatoes
1/2 c milk
1 T vegetable oil
2 c All Purpose Convenience Mix

Beat egg well, add potatoes, oil and milk, beat until smooth. Add Convenience mix, mixing well. Drop batter by tablespoons onto hot griddle. Cook over medium heat until golden brown, about 5 minutes for each side.

Makes about 25 small potato cakes
